Eggs are a great food to have for breakfast and I am always looking for new ways to cook them. Here is a great recipe for baked eggs and beans that is full of protein and fibre and will keep you full and full of energy until lunchtime!
Ingredients (4 Servings)
• 4 Eggs
• 1 can Chopped Tomatoes
• 240g Cooked Beans (or 1 can of cooked beans)
• 3 cloves Garlic (crushed)
• 1 tsp Paprika
• 160g Light Mozzarella
• Salt
• Black Pepper
• 1 tsp Olive Oil
Method
- Preheat oven to 200 degrees celsius and prepare a baking dish
- Heat the oil in a pan and add the garlic. Cook for a minute then add the chopped tomatoes, paprika, salt and pepper.
- Drain the beans and rinse well (if using canned beans)
- Reduce the heat and allow the tomato sauce to simmer for 5 minutes, then add the beans, mix them together and allow to simmer for another 3 minutes
- Place the tomato and bean mixture into the oven dish and 4 'holes' in the mixture. Break the eggs and place each one into one of the holes
- Grate the mozzarella and sprinkle on top
- Place the dish into the oven and bake for 15-20 minutes (until the egg whites have set)
- Remove from the oven and serve (leftovers can be stored and reheated for later)
