Here is a recipe for my favourite banana bread with no added sugar. We make it always when we want to treat ourselves and then have it with coffee. It is almost our ritual now. I am sure you will love it too. You should get about 15 servings from 1 loaf.
Dry Ingredients
- 240g wholegrain Spelt Flour
- 7g Baking Powder
- 20g Nuts (I used peanuts)
- 1 tsp hoeny
- 4 very ripe bananas
- 3 Eggs
- 2 Tsp Coconut Oil
- 2 tsp vanilla extract
- 1 tsp salt
- 1 tbsp lemon juice
Directions
- Heat your oven to 180 degrees celsius and prepare a baking dish by greasing it or placing oven paper inside.
- Chop the nuts into small pieces and mix all the dry ingredients (keep half the chia seeds spare) together in a bowl
- Mash up the bananas with a fork, melt the coconut oil (in a microwave or on the stove) and mix together all the wet ingredients in a separate bowl.
- Pour the wet ingredients into the dry ingredients and mix together well. Pour the dough into the baking dish and sprinkle the remaining chia seeds on top and sliced banana.
- Place into the oven for about 40 minutes (it is ready when you can push a skewer or toothpick into it and it comes out clean).
- Take out of the oven and leave to cool
- Toast it and enjoy it with your favourite spread (like homemade Nutella) or eat it raw!
Tips
You can also add ingredients to your liking. Sometimes I add blueberries or raspberries or strawberries, pieces of dark chocolate or dried coconut.
