I have said how amazing blueberries are here. The best bit is I finally managed to find a local farm near to me that grows them, so guess what we have been eating all the time? This means I needed to find a new recipe to use them. As it is summer time I thought the perfect thing would frozen yoghurt, so here is a quick and simple recipe for Blueberry Frozen yoghurt. Of course you can experiment and use whatever fruit you fancy.
Ingredients
- 250g Blueberries
- 250g Yoghurt
- 1 tbsp honey (Optional)
Method
- Place all the ingredients in a blender and blend together until it is smooth
- Pour the mixture into a plastic bowl, cover it and freeze for an hour
- Take it out and stir it to break up any ice crystals and place back in the freezer for another hour
- Take it out and enjoy! You can also try pouring the smoothie mix into ice lolly moulds and make frozen yoghurt lollies for your children!
