Chicken Schnitzel & Potato Salad

Tomorrow is World Food Day which is an international day to increase awareness about global hunger and malnutrition. As an ambassador for Jamie Oliver's Food Revolution in Slovakia I have been asked to share something that represents food in my country. So I have taken one of my favourite Slovak dishes and made healthy changes to the recipe for you all.  

Ingredients

For the Schnitzels (2 servings)

  • 2 Chicken Breasts
  • 75g Wholewheat Bread Crumbs
  • 1 Egg
  • 2 tbsp flour
  • 1/2 tsp Pepper
  • 2 tsp Thyme
  • Olive Oil in a spray bottle

For the Potato Salad (4 servings)

  • 2 potatoes (200g)
  • 4 tbsp Greek Yoghurt
  • 2 eggs
  • 1/2 cup peas
  • 1 large carrot
  • 2 gherkins
  • 1 onion
  • 1 tsp mustard
  • salt (to taste)
  • pepper (to taste)

Method- Potato Salad

  1. Peel the potatoes and carrots and boil them until soft. Also hard boil the 2 eggs for the potato salad.
  2. Cut the onion and gherkins into small cubes. Once the potatoes and carrots are cooked cut the potatoes into cubes and the carrots into thin slices. Also chop the eggs into small cubes
  3. Mix the potatoes, carrots, gherkins, peas, onion and eggs all together in a dish.
  4. Add the greek yoghurt, mustard and salt and pepper. Mix well and place in the fridge until the schnitzels are ready

Method- Schnitzels

  1. Cut the chicken in half horizontally and then use a mallet the flatten the 4 pieces of chicken
  2. Mix the pepper with the flour and place on a plate. Break the egg into a bowl and make sure it is well mixed. Finally mix the thyme with the breadcrumbs and place on a plate. 
  3. Preheat the oven to 200 degrees celsius and prepare a baking tray
  4. Dip each chicken piece into the flour, then the egg and then the breadcrumbs. Make sure both sides are coated and place on the baking tray
  5. Use the olive oil spray to lightly coat the top of each piece with oil (if you do not have a spray bottle you can use a brush)
  6. Place the schnitzels in the oven for about 10 minutes or until the top is starting to crisp. Turn them over, spray the other side with oil and place back into the oven for another 10 minutes or until cooked through

Schnitzel: 333Kcal 17g Carbs 11g Fat 37g Protein

Potato Salad: 155 Kcal 25g Carbs 3g Fat 9g Protein
