It's a perfectly balanced dish full of nutritions which tastes amazingly. Coconut chicken breast with baked sweet potato and asparagus
You need (the amount of all ingredients is depending on how many dishes you are making, I made 2 dishes):
- 2 Skinless chicken breasts
- 1 large Sweet Potatoes
- 250g Asparagus
- 10g Dried Coconut
- 2,5 tsp Coconut Oil
- Rosemary
- Thyme
- Salt
- Pepper
- 1/2 Lime
How to do it:
- Heat your oven to 200 degrees Celsius.
- In a bowl mix 1 tsp coconut oil, 1 tsp Rosemary, 1 tsp thyme, pinch of salt and pepper per large sweet potato.
- Chop the sweet potato into wedges and put in the bowl and mix until covered in all the ingredients.
- Repeat this with the asparagus and chicken breast, using 1/2 tsp oil and 5g dried coconut per chicken breast and 1tsp oil per 250g of asparagus.
- Place chicken and sweet potato on a baking tray and place into oven for 25-30 mins.
- Place asparagus on a tray and bake for 10 mins.
- Take out of the oven when cooked and serve with fresh lime squeezed over the top.
- Done!
