Cottage Pie with sweet potatoes
Ingredients (4 portions):
- 2 garlic cloves, crushed
- 1 lb grass-fed beef (I use 90/10)
- 1 large onion, finely diced
- 1 cup frozen peas (or fresh)
- 1 cup frozen carrots (or fresh)
- 1 tbsp extra-virgin olive oil
- 1 cup mushrooms, finely chopped
- 1/2 cup organic beef or chicken
- sea salt, to taste
- freshly ground pepper, paprika, to taste
sweet potato mash
- 2 large sweet potatoes
- 1/4 cup milk
- 1/2 avocado
- sea salt, pepper and paprika, to taste
Instructions:
- in a pan heat oil and garlic
- add sliced onions, frozen peas, and frozen carrots and let cook for 5 minutes or until translucent
- add beef and let cook until brown
- add stock, sea salt and pepper to taste
- reduce heat and let simmer for 10 minutes
- for the sweet potato mash
- preheat oven to 200'C
- place two sweet potatoes on a lined baking sheet and poke with fork
- let roast for 45-50 minutes until fork tender
- remove skin and place in bowl, using a potato masher, mash well
- add milk, avocado, seasoning and mash until desired texture
- assemble
- • place beef into a baking dish and put mash potato on top
- • bake on 190'C for 30 minutes then on broil (high) for 5 - 10 minutes until the top is golden
