Cottage Pie with sweet potatoes 

Ingredients (4 portions):

  • 2 garlic cloves, crushed
  • 1 lb grass-fed beef (I use 90/10)
  • 1 large onion, finely diced
  • 1 cup frozen peas (or fresh)
  • 1 cup frozen carrots (or fresh)
  • 1 tbsp extra-virgin olive oil
  • 1 cup mushrooms, finely chopped
  • 1/2 cup organic beef or chicken 
  • sea salt, to taste
  • freshly ground pepper, paprika, to taste

sweet potato mash

  • 2 large sweet potatoes
  • 1/4 cup milk
  • 1/2 avocado
  • sea salt, pepper and paprika, to taste

Instructions:

  • in a pan heat oil and garlic
  • add sliced onions, frozen peas, and frozen carrots and let cook for 5 minutes or until translucent
  • add beef and let cook until brown
  • add stock, sea salt and pepper to taste
  • reduce heat and let simmer for 10 minutes
  • for the sweet potato mash
  • preheat oven to 200'C
  • place two sweet potatoes on a lined baking sheet and poke with fork
  • let roast for 45-50 minutes until fork tender
  • remove skin and place in bowl, using a potato masher, mash well
  • add milk, avocado, seasoning and mash until desired texture
  • assemble
  • • place beef into a baking dish and put mash potato on top
  • • bake on 190'C for 30 minutes then on broil (high) for 5 - 10 minutes until the top is golden
