This recipe is great for breakfast or a snack. You can make it in bulk and store it for a few days. The best bit it is really simple! Here is how to make egg muffins
Ingredients (9 muffins)
- 6 Eggs
- 100g Spinach
- 5 Cherry Tomatoes
- 1/2 Onion
- 50g Goats Cheese
- Salt
- Pepper
Method
- Chop the spinach,onion and tomatoes into small pieces. Place into a pan and cook for a few minutes to soften them
- Break the eggs into a bowl, add salt and pepper and mix together. Add the cooked vegetables and mix well
- Grease your muffin tin and divide the egg mixture equally between each muffin cup (each muffin cup should be about 3/4 full). Crumble a little bit of goat's cheese on top of each
- Preheat the oven to 200 degrees celsius and then bake the muffins for about 20 minutes or until fully cooked through
- Remove the muffins and store in an air tight container in the fridge
