Sometimes I love to have french toast for breakfast. It is a dish that you can make lots of different ways and if you use good ingredients it can actually be quite a healthy dish. Here is my recipe for my favourite french toast
Ingredients (2 Servings)
2 Eggs
1/2 cup Milk
1 teaspoon cinnamon
1 teaspoon vanilla extract
4 slices wholegrain bread
1 tbsp Honey
4 tbsp Greek Yoghurt
1 Cup Blueberries
Method
Combine the eggs, milk, cinnamon and vanilla in a bowl. Whisk until well blended.
Soak the bread in the mixture for about 1 minute each side
Line a baking tray with baking paper
Pre-heat the oven to 150 degrees celsius
Place the bread on the baking tray and pour any extra egg mixture over the top
Place in the oven for about 10 minutes, turn over and bake for another 5-10 minutes or until baked to your liking
Add 1 tbsp greek yoghurt and the blueberries to each slice and drizzle honey over the top to serve
