My favourite holiday is coming up and I am already very excited, just like when I was a kid. We might be putting up a christmas tree today, just so we have festive atmosphere as long as we can. We started to bake christmas cakes so we feel the festive cheer.
Ingredients (You can make about 30 cookies)
- 130g Wholewheat flour
- 2 tbsp Honey
- 1 Egg
- 2 tbsp unsweetened apple sauce
- 1 tbsp Butter
- 2 tsp Cinnamon
- 2 tsp fresh Ginger
- 1/2 tsp Baking Powder
Method
- Warm up the butter and honey and mix together. Add the egg and apple sausce and mix well together.
- Great the ginger very finely (you can use ginger powder) and add it to the egg mixture and mix well.
- In another bowl mix together flour, baking powder and cinnamon and mix well together. Then add the egg mixture to the dry ingredients and mix until the dough has formed.
- Form the dough into a ball, wrap in cling film and place int the fridge for 2 hours.
- Preheat the oven to 160 degrees celsius and place baking paper on the baking tray.
- Take the dough out of the fridge and roll it until it is about 0,5 cm thick. Then use the cookie cutter to cut cookies to your liking (You can use walnuts to decorate the cookies).
- Place the cookies on the baking tray and place in the oven for about 7 minutes (they still should be slightly soft when you take them out) and allow to cool.
