Christmas time is here carols playing everywhere everybody is baking so I baked too. Although not Christmasy, but healthy, clean, full of energy, and especially for those who don't have time to prepare breakfast in the morning. Homemade granola or granola cake. As I use slightly different ingredients than usual recipes for home made muesli/granola bars, it isn't as solid as store bought granola, but it's healthier
INGREDIENTS
• 2 ripe bananas
• 1/2 cup (cup/measuring cup - 250ml ) peanut/almond butter (peanut butter - 100 % peanuts - no added sugar or palm oil)
• 1/2 cup nuts, I used walnuts and almonds (finely chopped or ground)
1 & 1/4 cup oats
• 1/3 cup seeds (to your liking - I used chia and sunflower)
• 1/4 cup raisins or dried cranberries
• 2 teaspoons of coconut oil
• 1 teaspoon of honey (if you don't want it to break add more honey, honey holds it together, but the more honey, the more sugar!!)
PROCEDURE
• mash bananas, add the peanut butter and coconut oil, heat over the stove, stir until combined and set aside to cool
• Mix the remaining ingredients (oatmeal, seeds, nuts, raisins), then mix it with the banana-coconut oil-peanut butter mixture and add honey
• evenly spread entire mixture into a baking dish, lined with baking paper
• Preheat oven to 180°C and bake for 18-22 minutes
• allow to cool before cutting into bars. Enjoy!
Add natural yogurt (low sugar) and you have a good breakfast full of protein and energy. Can't wait for breakfast
