Store bought mayonnaise is full of preservatives and chemicals that is why homemade mayonnaise can be a lot healthier.
You need (for about 250ml mayonaise):
- 2 yolks
- 1 tsp dijon mustard
- 1 cup (250ml) oliv oil
- 2 tsp lemon juice
- salt
Method:
- whisk the eggs until smooth
- slowly add lemon juice, mustard and salt (to your taste) and mix well
- then slowly add olive oil and mix well
