In England they traditionally have Hot Cross Buns for Easter. They are a fantastic treat and taste amazing. So I decided to make a healthier version. You can have them on their own, with butter or with jam!
Ingredients (6 Buns)
250g Wholegrain Flour
1 tsp Cinnamon
1 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tsp Salt
1/2 Cup Raisins or Currants
1/2 Cup Low Fat Milk
2 tbsp Honey
2 tbsp Coconut Oil
2 Eggs
1/2 tsp Vanilla Extract
For the Cross
3 tsp Flour
2-3 tsp Water
Method
- Preheat the oven to 180 degrees celsius and prepare a baking tray
- Mix together the flour, cinnamon, baking powder, baking soda, salt and raisins together in a bowl
- In a separate bowl mix the milk, honey, coconut oil, vanilla extract and 1 egg. Whisk the mixture together well
- Add the wet ingredients to the dry ingredients and mix together until a dough is formed (it will be a bit sticky)
- Dust a surface with flour and roll the dough into a ball. Then divide it into 6 pieces and form these into a bun shape. Place them on the baking tray
- Break the second egg into a bowl and whisk it together. Brush each buns with the egg mixture for the glaze.
- In another bowl add the 3 tsp of flour and slowly add in water until a thick paste has formed.
- Place this paste into a piping bag (or use a small freezer bag and cut a small hole int here corner) and use this to draw the cross on each bun
- Place the buns into the oven for 15 minutes or until ready
