New Year's Eve is fun because I have the opportunity to be creative. It is all about small, easy recipes. Loaded sweet potatoes are great because you can use any types of topping that you want . Today I used avocado, quark, spinach and bacon.
Ingredients
- 4 sweet potatoes (they can even though classic potato)
- One half of avocado
- 6 slices bacon
- 200g quark
- 200g spinach
- 2 cloves garlic
- lemon juice
- Salt, pepper
- 20g grated Parmesan cheese (optional)
Method
- Cut the Sweet potatoes in half and bake in a preheated oven at 180 degrees Celsius for about 45 minutes, or until there are sufficiently soft
- Scoop out the insides of the sweet potato and place into a bowl
- Chop the bacon into small slices and cook in a nonstick pan (no oil). When it is nearly done, rear the spinach and spinach add it to the pan. Cook until the spinach is wilted
- Slice the avocado and crush the garlic. Add the avocado, garlic, quark, spinach and bacon to the sweet potato insides (keep a little bacon on the side for toppings)
- Mix this all together well and add a dash of lemon juice and salt and pepper to taste
- Place the mixture in the sweet potato skins and top with the remaining bacon and grated parmesan (optional)
- Place back into the oven for 5-10 minutes to melt the parmesan
