Today's breakfast - oatmeal pancakes (full of fibre) with vegetables
You need
- 1/4 cup (250ml) old fashioned Quaker Oats
- 1/4 cup milk (if you're trying to lose weight, use skimmed milk)
- 1 large egg
- 1 Tbsp olive oil
- 1 cup whole wheat flour
- 1 tsp baking powder
How to make it
- mix oats with milk, let stand 5 minutes
- add egg and oil, then mix
- add flour and baking powder and mix until blended
- Top with toppings of choice! I fancied vegetables with homemade humus and homemade chilli salsa if you fancy sweet toppings, add natural yogurt, cinnamon and fruit
