As you already know we have asparagus season here and I cannot get enough of it. Often we are making my favourite asparagus soup (you can find recipe here), or just roast it with some nice meat or with eggs for breakfast. Try this amazing recipe for roasted asparagus with garlic and parmesan.
You need:
- 500g green asparagus
- 3 tsp olive oil
- 3 cloves of garlic
- salt
- pepper
- 20g parmesan (optional)
How to prepare it:
- crush the garlic and mix it with olive oil
- put asparagus on the baking dish (with a baking paper)
- coat the asparagus with oil
- flavour it with salt and pepper (by your taste)
- put it in the preheated oven for 180 degrees Celsius
- bake it for 20 minutes or until done
- take it out and sprinkle greated parmesan on top or you can serve it without parmesan, its amazing without it as well
- you can also squeeze lemon on top
