Porridge is one of my favourite meals. At night I am actually excited because I know that when I get up in the morning my husband will have made me porridge. The other day he tried something different, savoury porridge! It doesn't sounds right but it was amazing. Honestly, I promise if you try you will love it as well.....
Ingredients (2 Servings)
- 100g Rolled Porridge Oats
- 400ml Milk
- 2 Eggs
- 100g mushrooms
- 50g baby spinach
- 1 large Red Pepper
- 1/2 Onion
- 1 Small Handful Chives
- 1 tsp Olive Oil
- Salt
- Pepper
Method
- Cut the pepper, chives and onion into pieces. Heat the olive oil and cook the pepper, onion and chives until they are soft
- In a saucepan add the porridge and milk and cook for about 5 minutes. Add the cooked chives, onion and pepper and mix in. Add salt and pepper to taste
- Prepare the eggs any way you want (I love to have soft boiled, poached eggs)
- Serve the porridge in a bowl with the egg on top
