Today is World Pasta Day! To celebrate I have a quick and healthy recipe for those evening when you don't have much time to cook. Read how to make healthy Spaghetti Carbonara
Ingredients (2 servings)
- 200 g freshly podded or frozen peas (or I also use spinach, asparagus or mushrooms)
- 2 clove of garlic
- 1/2 large onion
- 20 g Parmesan cheese
- 100 g wholewheat spaghetti
- 2 rashers of lean British Bacon
- 2 eggs
- 100 g Quark
- 1 tsp Olive Oil
Method
- Boil the spaghetti in a saucepan until it is cooked. Drain the spaghetti and set aside
- Defrost or cook peas and drain. Also set aside
- Chop the onion, garlic and bacon into small pieces and heat the olive oil in a pan. Cook the onion and garlic until soft, then add the bacon and cook.
- Add the spaghetti and peas and break the eggs into the pan. Keep on mixing everything and make sure the spaghetti is fully coated in the eggs. Keep on cooking until the eggs start to set
- Add the quark and again mix everything together to make sure the spaghetti is fully covered
- Serve the spaghetti and grate the parmesan on top
- Enjoy your spaghetti with a nice salad on the side (I just make a quick one with spinach, red onion and cherry tomatoes)
