This is a quick and easy recipe to make if you are short on time. You can have it for breakfast, lunch or dinner and you can save leftovers for the next day! The sweet potatoes are full of Vitamin A and Vitamin C and loads of other nutrients as well! Here is how to make sweet potato hash
INGREDIENTS (2 servings)
- 1 medium sweet potato (300g)
- 1 onion
- 1 red pepper
- 8 cherry tomatoes
- 2 egg
- 1/2 tsp cayenne pepper
- 1 spring onion
- tsp Olive Oil
- 20g shredded parmesan
- 100g quark
- salt
- pepper
INSTRUCTIONS
- Chop the sweet potato into small cubes and slice up the onion and red pepper. Chop the cherry tomatoes in half
- Boil the sweet potatoes for about 10 minutes until they are soft and then drain them
- Heat the olive oil and cook the onions and red pepper until soft, add the sweet potato, seasoning, stir and cook for about 2 minutes.
- Add the tomatoes and cook for another 2 minutes
- Make 2 holes in the mixture and crack the eggs into these holes. Sprinkle parmesan on top and place the pan under the grill until the eggs have set
- Chop the spring onion into small pieces and sprinkle over the hash and add quark on top to serve. Add salt and pepper to taste
