preheat the oven to 180'C and cut the peppers (as on the picture) and take out the seeds.
put peppers on the baking dish, drizzle with olive oil and put it in the oven for 15 minutes or until soft.
meantime chop up the mushrooms and crush the garlic. Add a tsp of olive oil into a non sticky pan and cook the turkey until golden and then add garlic, mushrooms and onion and cook for another few minutes.
when onion and mushrooms are cooked add tomatoes and ground cumin. Then add a table spoon of soy sauce and mix well.
using table spoon put the turkey mince into peppers and sprinkle grated mozzarella on top.
Put top of peppers on top and serve with wholegrain couscous.
