Zucchini pizza boats
• 2 zucchini
• 1/4 cup (cup - 250ml) pasta sauce/tomato puree (I make/cook it myself with fresh tomatoes; when purchased, check the sugar content)
• 1 tsp mashed/squeezed garlic
• 1/2 cup shredded mozzarella
• 1-2 tbsp shredded parmesan
• cherry tomatoes, sliced thinly
• seasoning (salt, pepper, oregano - to your liking)
Procedures
preheat oven to 375'F/190'C
slice your zucchinis in half lengthwise, so you have 4 boats in total
use a spoon to spoon out the inside of the zucchini boat (keep the boat about 1/4 thick) and transfer the insides to a bowl
combine pasta sauce/tomato puree and garlic with the zucchini flesh + seasoning
transfer zucchini mixture back into the boats, dividing mixture evenly between the 4 boats
sprinkle mozzarella and parmesan on top of boats
lay tomatoes on top of cheese as desired
bake for 15-20 mins until zucchini are tender and cheese melted
